S\u00fcs bitkisi olarak da kullan\u0131l\u0131r. Estetik g\u00f6r\u00fcn\u00fcm\u00fcn\u00fcn yan\u0131 s\u0131ra bodur, dayan\u0131kl\u0131 ve heybetli, ilaveten \u00e7\u00fcr\u00fcmeye de son derece dayan\u0131kl\u0131 olan bu a\u011fa\u00e7 uzun \u00f6m\u00fcrl\u00fcd\u00fcr. Boyu, enderen 20 metrelere dek ula\u015fan y\u00fcksek civarlara \u00e7\u0131kma hali olmakla e\u015f g\u00fcd\u00fcml\u00fc \u00e7o\u011funluklu olarak 2 ila 10 metre aras\u0131nda de\u011fi\u015fir. Kurakl\u0131ktan etkilenmedi\u011fi amac\u0131yla ortalama 2-3 y\u00fcz sene aras\u0131 ya\u015fam s\u00fcrd\u00fcren zeytin a\u011fac\u0131, 2 bin sene ya\u015fayabilme potansiyeline de sahiptir\u201d dedi. \u201c\u0130LLE DE ZEYT\u0130NYA\u011eI\u201d Zeytin a\u011fac\u0131n\u0131n odununun mutfak e\u015fyalar\u0131, oyma malzemeleri ve mobilyalarda kullan\u0131ld\u0131\u011f\u0131n\u0131 da dile getiren Prof. Dr. Karabulut, \u201cYapra\u011f\u0131 da k\u0131ymetli olmakla e\u015f g\u00fcd\u00fcml\u00fc, temel itibar\u0131yla sarfedilen alan\u0131 meyvesidir. Bir\u00e7ok \u00e7e\u015fidi olan zeytinin ilk evvelce ya\u011f\u0131 \u00e7ok k\u0131ymetlidir ve ticari anlamda talep zemini de son derece geni\u015f olan m\u00fchim bir \u00fcr\u00fcnd\u00fcr. Nitekim d\u00fcnyada imal edilen zeytinlerin y\u00fczde 90 gibi b\u00fcy\u00fck bir b\u00f6l\u00fcm\u00fc ya\u011f \u00fcretiminde kullan\u0131lmaktad\u0131r. Yemeklere e\u015fi benzeri olmayan bir lezzet ve s\u0131hhat katan zeytinya\u011f\u0131ndan elde edilen sabun, \u015fampuan ve du\u015f jelleri sadece natural de\u011fil, ayn\u0131 vakitte \u00e7ok yararl\u0131d\u0131r. Bu cinsten zeytinya\u011fl\u0131 \u00fcr\u00fcnlerin sa\u00e7larda kepeklenmeyi ve d\u00f6k\u00fclmeyi \u00f6nledi\u011fi, cildi g\u00fczelle\u015ftirdi\u011fi, k\u0131r\u0131\u015f\u0131kl\u0131klar\u0131 giderdi\u011fi ve ya\u015flanmay\u0131 geciktirdi\u011fi bilinmektedir. \u00d6te yandan bu lezzetli meyve kahvalt\u0131 sofralar\u0131n\u0131n da vazge\u00e7ilmezidir ve bu cinsten g\u00fcndelik t\u00fcketim amac\u0131yla imal edilen \u00e7e\u015fitlerine sofral\u0131k zeytin denilmektedir. Sofral\u0131k t\u00fcrlerinin ye\u015fil, yeti\u015fkin ve kara olmak \u00fczere \u00fc\u00e7 \u00e7e\u015fidi tespit edilen ve Akdeniz mutfa\u011f\u0131n\u0131n vazge\u00e7ilmez bir unsuru olan zeytinin i\u015flemi\u015f d\u00f6nemlerde ayd\u0131nlatma hedefli s\u0131v\u0131 yak\u0131t olarak kullan\u0131ld\u0131\u011f\u0131n\u0131, \u015f\u00fcphesiz T\u00fcrklerin tereya\u011f\u0131 k\u00fclt\u00fcrlerinden kaynakl\u0131 mutfakta k\u0131s\u0131tl\u0131 civarda g\u00f6rd\u00fc\u011f\u00fcn\u00fcz Osmanl\u0131lar d\u00f6neminde bal\u0131k yemeklerini ve salatalar\u0131n\u0131 \u00e7e\u015fnilendirdi\u011fini de belirtelim. Son olarak T\u00fcrklerin zeytin ve zeytinya\u011f\u0131 ile Anadolu\u2019da tan\u0131\u015ft\u0131klar\u0131n\u0131, \u00fcretimini \u00f6\u011frenerek \u00e7e\u015fitlendirdiklerini ve zeytini t\u00fcrk\u00fclerine, deyimlerine, atas\u00f6zlerine ve manilerine d\u00e2hil ederek bu meyvenin kadim k\u00fclt\u00fcr\u00fcne \u00e7o\u011fu noktada katk\u0131lar sa\u011flad\u0131klar\u0131n\u0131 da not etmeden ge\u00e7meyelim\u201d ifadelerine yer verdi. \u0130\u00c7ER\u0130\u011e\u0130 VE SA\u011eLI\u011eA FAYDALARI Yapra\u011f\u0131nda muhtelif u\u00e7ucu ya\u011flar ve organik asitlere ilaveten tanen ve rezin tespit edilen zeytinin, ilaveten i\u015flenme \u015fekli ile alakal\u0131 olarak i\u00e7eri\u011findeki maddelerin oranlar\u0131nda de\u011fi\u015fmeler g\u00f6r\u00fclebildi\u011fini de bildiren Karabulut, bedeni ultraviyole \u0131\u015f\u0131nlar\u0131na kar\u015f\u0131 koruyan yo\u011fun E vitamini ve sodyumunda zeytinde yer ald\u0131\u011f\u0131n\u0131 s\u00f6yledi. Prof. Dr. Karabulut, Yine zeytin b\u00fcnyesinde protein, ya\u011f ve omege-3 ile omega-6 t\u00fcr\u00fc ya\u011f asitlerinin yan\u0131 s\u0131ra A ve C vitaminleri, demir, kalsiyum, fosfor, k\u00fck\u00fcrt, klor ve magnezyum da bulundu\u011funu ifade etti. \u00d6zellikle muhtevas\u0131nda K vitamini olan ye\u015fil zeytinde ilaveten potasyum, karbonhidrat, protein, lif ve oleik asit gibi maddelerin bulundu\u011funu da kaydeden Karabulut, zeytinin sa\u011fl\u0131\u011fa faydalar\u0131n\u0131 \u015fu \u015fekilde s\u0131ralad\u0131: \u201cZeytinya\u011f\u0131, ateroskleroza tehlikesini azaltan, kan bas\u0131nc\u0131n\u0131 d\u00fc\u015f\u00fcren ve k\u00f6t\u00fc kolesterol civar\u0131n\u0131 d\u00fc\u015f\u00fcr\u00fcp iyi kolesterol civar\u0131n\u0131 y\u00fckselten s\u0131hhatli bir ya\u011fd\u0131r.
